Functional Food Friday: Skillet Roast Chicken & Smashed Potatoes

This weekend we visited the Leucadia Farmers’ Market and one of our stops was at Descanso Valley Ranch’s stall. We bought one of their heritage chicken broilers and the farmer told us how he likes to cook his chicken. While we have roasted many chickens we had never thought to roast it in a skillet. He said that this method – which is so simple – results in juicy tender meat and crispy skin so we were sold on trying it ourselves.

As it turned out, our farmer was right! The chicken was indeed juicy, tender and the skin wonderfully crisp. Best of all it was almost a one-dish meal because the pan juices from the roasting could easily be reduced and turned into a delicious pan sauce right in the skillet. Of course we did use other dishes because the chicken was served with smashed potatoes and asparagus.
